Welsh Honey

This year a crop of honey I took of two of my hives has an unusual but pleasant taste, I can't put my finger on it but it gives a kick on the back of the throat, does anyone know the source of nectar or experienced that with their honey. I will have to do a pollen analysis to find out more.

Just extracted some spring honey which has a darker appearance than the usual summer honey, the taste is similar to toffee or nuts, or both and is one of the nicest honeys I have tasted.
